What to do with about 3lbs of turkey meat leftovers? Well, this is where I love to test my creativity. Several options awaited me:
Sandwiches:
Turkey, cranberry sauce, sharp swiss cheese, brown mustard and spinach pressed on George Foreman to perfection.
Turkey, turkey bacon, avocado, onion, spinach, brown mustard on toasted bread.
Entrees:
Turkey noodle soup; leftover pasta, turkey, carrots, celery and onion, homemade turkey stock, and a scoop of gravy to add a little something something.
Turkey and dumplings; turkey, all the leftover gravy, carrots, celery, and easy and quick whole wheat dumplings. Yum, yum!
Stuffed french toast; stuffed with cream cheese and cranberry sauce.
