Again, this is not really a recipe that is new to me but hey, at least I am in the kitchen giving a few things a whirl. I am especially on a challenge to eat up a lot of the food I have on hand and many of the Groupon/Livingsocial coupons I have that might expire before I come back from West Virginia. Sunday I was at home and hungry and craving chicken fingers…enter: Triscuit Baked Chicken Fingers:
Triscuit Baked Chicken Fingers

Ingredients:
- 2 chicken breasts
- 4 triscuits
- 2 tbs (ish, I don’t measure) bread crumbs
- dash poultry seasoning
- dash of garlic salt
- dash of pepper
- dash of chipotle powder
Directions:
- Slice up chicken the size you would like it. Crush Triscuits in plastic ziplock bag until fine. Add bread crumbs and seasonings of your choice to the bag. Add the chicken, give a very good toss. Lay out on a greased baking sheet or dish and place in 350 degree oven for 25 minutes turning over once.
Perfection to me. I think I could eat these chicken fingers every night of the week. They remind me of being a kid for whatever reason. I think I really like nostalgic food like that. Other nostalgic food I can think of right now: grilled cheese and tomato soup, mac and cheese from a box (I should make both of those soon), french toast (only because I like making it for the family when I am home, not that it really reminds me of childhood at all), beef pot roast, peanut butter toast (haven’t had that one in a while either, especially after Bryan commented that that sounded like the definition of dry mouth), plus many others.
